Wheat varieties within the nabim Group 2 classification express a range of different quality characters. Whilst varieties such as Soissons exhibit very high levels of quality and are desirable in small quantities, they do not fit with high through put bread-making systems used by the baking industry, which are based upon the Chorleywood Breadmaking Process (CBP).
Panorama, however, has been selected to meet the demands of this core market and is likely to find favour with all millers. Panorama produces white flour and in baking tests has produced consistently good bread. Because of its wide appeal it is seen as a natural partner and successor to Einstein, however, Panorama does not share Einstein’s problem of low flour water absorption, which has limited the use of Einstein in bread-making grists.
